Smithfield Ham

Saw this today in the HEB supermarket in San Marcos, Texas. These are country hams, from the Smithfield website: “dry salt-cured, slowly hickory smoked, and aged for six months to one year.” Unlike most hams, which are very quickly processed and filled with water, these have a strong flavor. We got to know them first in the Ozarks in Missouri. Smithfield hams are made in Virginia. In Missouri we got ours at Burgers Smokehouse in California, Missouri.
